Ingredients

Dash aromatic bitters (Angostura style)

Cocktail

2 oz Liquor 43

1 ½ oz hot or chilled espresso (or 2 oz strong cold brew concentrate)

¾ oz Spiced Dole Pineapple Syrup (recipe below)

Dash ground cinnamon

Dash aromatic bitters (Angostura style)

1 tbsp Dole Chef-Ready Cuts Pineapple Cubes

Ice

Spiced Dole Pineapple Syrup

1 cup Dole Chef-Ready Cuts Pineapple Cubes, thawed

1 cup Dole Pineapple Juice

½ cup sugar

1 cinnamon stick

3-4 whole cloves

2 strips orange peel (optional but recommended)

Directions

Spiced Dole Pineapple Syrup

  1. Combine all ingredients in a small saucepan. Bring to a gentle simmer for 8-10 minutes.
  2. Mash pineapple lightly to release flavor. Strain and discard solids.
  3. Chill before service. Holds 5-7 days refrigerated.

Cocktail Build

  1. Add Liquor 43, espresso, spiced pineapple syrup, cinnamon and bitter to a cocktail shaker with a handful of ice.
  2. Shake hard for 10-12 seconds until chilled and frothy.
  3. Strain over fresh ice into a rocks glass.
  4. Spoon Dole Chef-Ready Cuts Pineapple Cubes over top.
  5. Optional: Dustry with a very light pinch of cinnamon.
