"Samantha" Dark Chocolate Brownie with Strawberry Jam

Ingredients

Brownie Ingredients

675 g butter, melted

300g granulated sugar

900g dark brown sugar

9 eggs, room temp

30g vanilla extract

25g coffee extract

360g all purpose flour

225g cocoa powder

25g kosher salt

780 g dark chocolate chips

Strawberry Jam

2,000 g IQF or Chef-Ready Cuts Strawberries

600g granulated sugar

70g lemon juice

Pinch Kosher salt

Garnishes

Ruby Chocolate Ice Cream, as desired

Spicy Chocolate Cookie Crumble, as desired

Directions

Brownie Method

  1. Preheat the oven to 345°F. Line a 4" full-size metal hotel pan with parchment paper and spray with non-stick spray.
  2. Melt the butter. In a large mixing bowl, whisk together granulated sugar and dark brown sugar, then add to the melted butter.
  3. Whisk in the eggs, coffee extract and vanilla extract thoroughly until fully incorporated. 
  4. In a separate bowl, sieve the all-purpose flour and cocoa powder, and mix in the kosher salt.
  5. Combine the wet and dry ingredients by gently folding them together with a spatula. Stir in the dark chocolate chips.
  6. Pour the batter into the prepared pan and bake for about 30 minutes, or until a toothpick inserted in the center comes out clean. Let cool before serving.

Strawberry Jam Method

  1. Place strawberries, granulated sugar, lemon juice, and kosher salt in a pot over medium heat and bring to a boil.
  2. Allow the fruit to soften, then blend with a hand blender until smooth.
  3. 3Continue boiling until the jam reaches 105°C, stirring occasionally with a rubber spatula to prevent burning. Allow to cool before use.

Assembly

  1. Cut the brownie into portions and warm if desired.
  2. Place on a plate and top with ruby chocolate ice cream.
  3. Add a sprinkle of spicy chocolate crumble and a drizzle of strawberry jam.
