(2021 Pairings – Kenya – Africa & the Middle East) - Ripe pineapple rounds dipped in coconut milk, sugar and cinnamon grilled until caramelized and topped with pineapple frozen yogurt and fresh mint.

2 cups plain yogurt
20 oz. DOLE Pineapple Tidbits in juice undrained
1 Tablespoon honey
30 each DOLE Pineapple Slices drained
2 cups coconut milk
1 Tablespoon ground cinnamon
1 Tablespoon sugar
1 Tablespoon for garnish julienned fresh mint
Preheat flat top grill to 350°F degrees.
In a small bowl combine yogurt, pineapple tidbits and juice and honey in a freezer safe bowl. Freeze for at least 2 hours.
Place Pineapples in a dish and pour coconut milk over top. Massage to ensure pineapple is coated.
Place Pineapples on Cookie Sheet.
Combine Cinnamon and Sugar in separate bowl.
Sprinkle cinnamon mix over 1 side of pineapples, leaving enough mix for other side later.
Place pineapple cinnamon side down on grill and cook for 2 to 3 minutes. Sprinkle remaining cinnamon mix over pineapples before turning. Cook for 2 more minutes.
