K-12 Mango Chicken Mexican Flatbread (Tlayuda)
In Oaxaca, tlayudas are known as the “Mexican pizza.” This version layers familiar flavors—chicken, cheese, beans—with a bright pop of mango to spark curiosity and bring a cultural connection to your global lunch menu. Credits as ½ cup Fruit serving per USDA Meal Pattern Requirements.
Ingredients
2½ cups low-sodium black beans, rinsed and lightly mashed
5 cups diced cooked chicken breast
10 cups Dole Chef-Ready Cuts Mango Cubes, thawed
1¼ cups salsa (mild, smooth)
2 Tbsp lime juice
2 tsp chili powder (optional)
20 whole-grain flatbread rounds or 6" whole wheat tortillas
5 cups shredded reduced-fat mozzarella or cheddar cheese
½ cup chopped cilantro (optional garnish)
Directions
- Mix chicken, beans, mango, salsa, lime juice, and chili powder (if using).
- Spread a portion of the mixture over each flatbread (about ½ cup topping).
- Sprinkle with cheese. Bake at 375°F for 8–10 minutes until cheese melts.
- Cut each flatbread in half and serve one half per student.
