Sweet Caroline Sandwich

This grilled cheese is dripping with Brie, melted sharp white cheddar, cranberry jam and apple slices. Served with cranberry jam for dipping. Recipe inspired by Steve Ewing and Chef Joe Zeable of Steve's Meltdown.

Ingredients

Cranberry Dipping Sauce

½ cup Dole IQF Cranberries, thawed

¼ cup water

2 tbsp sugar

Sweet Caroline Sandwich

2 ea sourdough bread slices

2 tbsp spreadable brie cheese

3 ea white cheddar cheese slices

½ cup Dole IQF Sliced Apples, thawed (roughly 6 slices)

Directions

Cranberry Dipping SAuce

  1. Add the cranberries and sugar to a blender with water and pulse together, add to a saute pan and simmer for 5 minutes to thicken and set cranberry sauce aside.

Sweet Caroline Sandwich

  1. Spread 1 tbsp brie on each slice of bread.
  2. Divide the white cheddar cheese equally on both slices of bread.
  3. Add apple slices to one side and 1 tbsp cranberry sauce to opposite side.
  4. Leave sandwich open-faced and toast under a broiler for 2 minutes until cheese is melted and bread is toasted. Close sandwich and serve warm.
