Ingredients

1 cup Dole Chef-Ready Acai Banana Puree Chips

1½ cup sugar, divided

1½ cup water, divided

1 tsp ginger, minced

1 cup Dole Chef-Ready Passion Fruit Puree Chips

3 ea Makrut lime leaves

1 cup Dole Chef-Ready Pomegranate Blood Orange Puree Chips

½ Tbsp allspice

½ Tbsp star anise

shaved or crushed ice, as needed

mint, for garnish

powdered sugar, for garnish

Directions

Method:

  1. To a medium saucepan add the acai banana puree chips, ½ cup sugar, and ½ cup water over medium heat.
  2. Add minced ginger and allow puree chips to melt and reduce mixture by half, stirring frequently.
  3. Strain through fine mesh strainer and allow to cool completely.
  4. Repeat steps 1-5 with the passion fruit puree chips and Makrut lime leaf.
  5. Repeat steps 1-5 with the pomegranate blood orange puree chips, allspice and star anise.

To Prepare the Snow Cones:

  1. Pack glass half full of shaved or crushed ice and top with preferred prepared syrup (approx. 1.5 fl oz).
  2. If you are adding a spirit, this is the best time to do so. Add 1.5 fl oz of preferred spirit.
  3. Pack the rest of your glass with shaved or crushed ice, filling so the ice is level with the glass.
  4. Add more syrup (approx. 1 fl oz) and mound ice on top to create a small dome.
  5. Garnish with a lush mint sprig dusted with powdered sugar. Serve with a spoon or straw and enjoy!
