Piña Colada Bibingka

Ingredients

8 oz cream cheese, softened

2 cups granulated sugar

3 eggs

4 cups sweet rice flour

1 Tbsp baking powder

½ cup butter, melted

1 Tbsp vanilla extract

15 oz cream of coconut

1 cup DOLE 100% Pineapple Juice

1 cup milk

8 oz Dole Crushed Pineapple, drained

¼ cup coconut flakes, toasted

Directions

  1. Preheat oven to 350 degrees F. Grease a 13x9" baking pan.
  2. In a large bowl, cream together the cream cheese and sugar. Beat in the eggs one at a time. Stir in the melted butter, vanilla extract, cream of coconut, milk, pineapple juice and drained pineapple.
  3. In a separate bowl, whisk together the sweet rice flour and baking powder. Gradually add to the wet ingredients and stir until just combined.
  4. Pour batter into the prepared baking pan. Sprinkle with toasted coconut flakes. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
  5. Let cool completely before cutting into squares. Serve warm or cold.
