Ingredients

10 ea salmon fillets

salt and pepper to taste

5 Tbsp honey mustard

3 Tbsp fresh thyme, minced

3 Tbsp extra virgin olive oil

2 cups (8 oz) Dole® Good Crunch™ Pineapple Bites, finely ground

5 Tbsp flat leaf parsley, minced

1 Tbsp paprika

Directions

  1. Preheat oven to 375 degrees.
  2. Season salmon fillets with salt and pepper.
  3. In a small bowl, mix the honey mustard and half of the thyme.
  4. In another mixing bowl, combine the olive oil, remaining thyme, pineapple bite crumbles, parsley, and paprika.
  5. Top the salmon fillets with a smooth spread of the thyme and mustard mix, then press in a topping layer of the crumble.
  6. Roast the salmon on a sheet tray in the preheated oven for roughly 12 minutes or until the salmon is cooked and the topping is a deep golden brown.
