Banana Rice Pudding

Ingredients

1 ½ cups DOLE Chef-Ready Cuts Sliced Bananas, defrosted and rough chopped

2 ½ cups Rice, short grain, rinsed thoroughly

¼ cup Butter

2 tsp Cinnamon

1 cup Water

16 oz. Sweetened Condensed Milk, canned

1 tbsp Vanilla

3 cups Milk

1 tsp Nutmeg

½ cup Raisins

1 cup Sugar

2 tbsp Cinnamon, for garnish

1 cup DOLE Chef-Ready Cuts Sliced Bananas, defrosted for garnish

Directions

  1. In a Large sauté pan over medium heat melt butter and add rice. Cook for 3 minutes.
  2. Add water, cinnamon and nutmeg and bring to a boil. Cook for 5 minutes.
  3. Add condensed milk, vanilla, milk and bring back to boil. Reduce heat to low and cook for one hour stirring often.
  4. Add raisins and Bananas and remove from heat to cool to room temperature. Stir often.
  5. Garnish with cinnamon and banana slices.
