The colors and large variety of fruits on the islands of Fiji are what makes this Smoothie Bowl so delectable. A brilliant combination of dragon fruit, coconut milk, pineapple juice, bananas, mangoes, pineapples and kiwis - topped with toasted coconut, granola, and honey.

Ingredients

1 cup Dole Chef-Ready Cuts Diced Dragon Fruit, frozen

½ cup coconut milk

¼ cup Dole Pineapple Juice

½ cup Dole Chef-Ready Cuts Sliced Bananas, frozen

¼ cup Dole Chef-Ready Cuts Mango Cubes, frozen

2 tbsp honey

¼ cup granola, premade

½ kiwi, peeled, sliced

¼ cup Dole Chef-Ready Cuts Pineapple Cubes, partially thawed

3 tbsp toasted coconut

Directions

  1. Place the dragon fruit, coconut milk, pineapple juice, banana, mango, and 1 tablespoon of honey in a blender and blend until smooth. Add more pineapple juice if consistency is too thick.
  2. Pour the smoothie mixture into a bowl and top with granola, kiwi, pineapple, toasted coconut, and a drizzle of the remaining honey.
