Avocado Ice Cream Acai Bowl

Ingredients

1 lb or 2-½ cups DOLE Chef-Ready Cuts Diced Avocado

2 cups canned coconut milk chilled

½ cup heavy cream chilled

½ cup granulated sugar

1 teaspoon coconut rum

1 teaspoon lime juice

1 zest from 1 lime

5 cups prepared acai berry puree

avocado ice cream sub-recipe

1-¼ cup granola

1-¼ cup fresh or frozen DOLE Raspberries thawed

1-¼ cup whipped coconut topping optional

Directions

  1. Avocado Ice Cream Method:

    1. Place the avocado into a blender with the coconut milk and blend until smooth.

    2. Add in the heavy cream, granulated sugar, coconut rum, lime juice and lime zest and puree until smooth and creamy.

    3. Place into an ice cream maker and churn until desired texture has been reached.

    4. Remove the ice cream from the maker and place into an air tight container and freeze until set.

  2. Acai Bowl Method:

    1. Fill a bowl with 1/4 cup prepared acai puree, top with a scoop of the avocado ice cream and garnish with 1 tablespoon each granola, raspberries or other fruit and a dollop of whipped coconut topping!
