Jerk Tilapia with Caribbean Mango Sauce

Ingredients

1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon hot pepper sauce

¾ cup DOLE Pineapple Juice

1 cup DOLE Chef-Ready Cuts Mango Cubes partially thawed

⅓ cup black spiced rum

½ cup packed brown sugar

⅓ cup chicken broth or stock

1 pound tilapia fillets

2 teaspoons jerk seasoning

Directions

  1. Combine onion powder, garlic powder, hot pepper sauce, pineapple juice, mango, rum, brown sugar, and chicken stock in a medium saucepan. Bring the mixture to a boil. Reduce heat;  simmer 20 minutes or until sauce is reduced by half.
  2. Spray tilapia filets with cooking spray.  Rub with jerk seasoning.
  3. Pan fry tilapia until fish is opaque and flakes easily, about 4 minutes on each side.   Serve fish with sauce.
