Minty Tropical Salsa

A tropical fruit salsa that is seasoned with mint.

Ingredients

16 fl. oz. (2 cups) apple cider vinegar

1 cup sugar

1 tsp. crushed red pepper

1 tsp. red bell pepper chopped

2 cups frozen DOLE Mango Chunks partially thawed

2 cups frozen DOLE Tropical Gold Pineapple partially thawed

⅓ cup fresh mint leaves chopped

1 tsp. kosher salt

Directions

  1. Place first 4 ingredients in saucepan and simmer over low heat until slightly thickened.
  2. Place mango and pineapple in food processor container and pulse until fruit is coarsely chopped.  Place in large bowl.
  3. Add cooled vinegar mixture, mint, and salt, stir well.  Serve with grilled seafood or chicken.
