Pink Dragon Fruit Coquito

Ingredients

15 oz can cream of coconut

12 oz can evaporated milk

14 oz can sweetened condensed milk

1 cup Dole Pineapple Juice or coconut milk for less acidity

1 cup Dole Chef-Ready Cuts Diced Dragon Fruit, thawed

1 ½ cups white rum

1 tsp vanilla extract

1 tsp cinnamon

¼ tsp nutmeg

Pinch of salt

Directions

  1. Add cream of coconut, evaporated milk, condensed milk, and Dole Chef-Ready Cuts Diced Dragon Fruit to a blender. Blend until the fruit is fully pureed and the mixture is bright magenta.
  2. Add rum, pineapple juice (or coconut milk), vanilla, cinnamon, nutmeg and salt. Blend briefly, transfer to sanitized container and chill for at least 4 hours (overnight recommended).
  3. Shake before service and pour.
