Quinoa & Black Bean Mango Salad with Chicken.

Ingredients

10 cups IQF Dole Chef-Ready Cuts Mango Cubes

5 cups sweet red peppers, raw

10 cups black beans

1 cup apple cider vinegar

½ cup Dole 100% Pineapple Juice

¾ cup olive oil

1 Tbsp black pepper

10 cups quinoa, cooked

49 oz fillet-style chicken, grilled or baked

Directions

  1. Combine quinoa, mango cubes, bell pepper and black beans in a large serving pot. Stir to evenly distribute.
  2. In a separate mixing bowl, combine dressing ingredients (apple cider vinegar, reserved mango juice, pineapple juice, olive oil and ground pepper). Pour over quinoa mixture and stir to combine.
  3. To serve, scoop 1 cup of mixture into serving bowl.
  4. Serve with 2.45 oz chicken fillet and 1 cup milk.
