Pineapple Fried Rice

A sweet and savory blend of fried rice, diced chicken, pineapple cubes and veggies. Recipe inspired by Chef Nina Singto of Thai Esane.

Ingredients

2 oz vegetable oil

1 tbsp minced garlic

6 oz chicken breast, medium dice

2 ea eggs

1 cup white rice, cooked and cooled (preferable 1 day old)

¼ cup yellow onion, minced

½ cup frozen carrots and peas

2 oz soy sauce

1 tsp sugar

2 tbsp raisins

1 cup Dole Chef-Ready Cuts Pineapple Cubes, thawed

Directions

  1. Add oil to pan over medium heat. Add minced garlic and chicken and cook for approximately 5 minutes.
  2. Add egs, stir until mixed. Then add rice, vegetable and raisins. Stir to combine.
  3. Stir in soy sauce and sugar cooking and stirring for 3 minutes until fully cooked. Add pineapple. Turn off heat and serve.
